It is considered that the quantity of various coffee sorts, known to mankind, exceeds one thousand. But there are much more ways of its preparation and serving.

Flavoring qualities of a drink depend on many factors. There are not any trifles, everything is important: from a coffee sort choice to bean’s frying and grinding degree.

For example, Americans, who worry about their health to fanaticism, usually drink light coffee without caffeine. Temperamental Italians and, strangely enough, cool Swedes, on the contrary, prefer very dark, black as night, coffee. And diplomatic Frenchmen search for color and taste golden mean. Anyway, each country, each nation, and even each separate individual has his own firm recipe of coffee preparation and drinking.

In Australia, in at first sight absolutely non-coffee country, the waiter will certainly ask you, which – white or black – coffee do you want. In the kangaroo and eucalyptuses homeland “white” is coffee with milk, however, you can meet such coffee designation also in the Old World – in Italy or France.

Speaking about coffee traditions the first that occurs to many people, of course, is Viennese coffee: a strong, dense drink with a snow-white cloud of the whipped cream strewed with small chocolate crumbs. At desire it is possible to add a pinch of vanilla or powdered sugar to cream.

Polish coffee is also very good. Barista add some sugar and a few spoons of milk to a black billowing liquid. When mixture begins to boil, he slightly beats it up for light foaming.

In Stockholm local residents add beat egg yolks with sugar and a wine-glass of rum to the welded and filtered coffee, decorating it with cream above.

Frenchmen have their national coffee recipe – with salt and cognac.

Romanians add cocoa-powder, vanillin, sugar and whipped cream to a strong dark potion.

German beer fans will not refuse a drink with sweet cherry juice – they pour juice in hot coffee, cool it down and drink with ice. And, certainly, speaking about European coffee traditions, it is necessary to mention Italian cappuccino: coffee with beat for light foaming milk.

It is interesting that in numerous coffee houses of a New World among other popular recipes you can find Russian coffee: in the big cup barista mixes two-three instant coffee spoons, one spoon of chocolate syrup and three quarters of cup with hot milk. Whipped cream and chocolate shaving is above.

There is also a Cossack coffee – a rattling mix of strong coffee, red wine and vodka. Sugar is added to yours taste. For certain, it is a good cough medicine, but as any medicine, it is desirable to drink it in small doses.

In general, people, once again proving their love to “a devil potion”, aspire to improve its taste, adding numerous liquors, balms, cognacs, whisky, rum, ice cream, fruit, juice and even herbs. It is possible to choose any of thousand known recipes. Your love always will be mutual, real, true and eternal.

Brazil is not the country of only magnificent carnivals. Besides, the best coffee is grown up there, and people, apparently, aspire to make preparation of an invigorating drink more convenient, fast and esthetic. Such purpose was raised by Alisson Wilson Ströher – the young designer from the Brazilian city Curitiba.

As a result, an automatic coffee maker Nilko IMO was emerged. It is the compact, conveniently folding kitchen device which tank suffices for three coffee bags preparation (yes, coffee in this case is used packaged).

Distinctive visual feature of the device is a set aside “hand” from which “elbow” coffee is poured in a cup (a coffee maker is count on cups in capacity of 75 ml). Thus you can turn “hand” to various positions that allows to arrange a coffee maker corresponding to the growth.

Any more pluses? Certainly. Nice design is one of them. The device looks original and esthetical.

The main minus consists in the fact that Nilko IMO now is only in a project stage. Hypothetical cost of the serial model will be about 130 US dollars.

They necessarily drink one-another cup of coffee being on a business meeting, after it, in the evening, retiring with a cigar and cognac…

Annals mention coffee for the first time in 575 year. For some men coffee-drinking became the business daily, other have created the real coffee cult, with its own ceremonies, sacraments and initiations…

The true gourmet drinks to fifty cups of black as night coffee without cream during a day. You must spend not less than a half of an hour for preparation of this noble drink and, perhaps, the most fascinating stage is a bean’s grinding.

Hundred years ago, long before coffee became known in Europe, Arabs used mortars and pestles for bean’s crushing. Only the skilled master of coffee business could reach a high grinding quality. For this reason it is considered that for simplicity of an invigorating drink preparation Arabs have invented a wonderful coffee grinder, the mechanical device with rotating handle.

Coffee grinders were made of beech, nut, oak, sometimes mahogany. Firm breeds of these trees have no smell; therefore they are ideal for whimsical coffee beans storage. Coffee grinders were never stuck together, masters used only natural tools: wood pitch, plugs made of tree – for assemblage of the man-made device skeleton. Coffee grinder’s sides have absorbed a smell of the crushed coffee potion, because they roughness was never processed. And when the coffee grinder was ready, it was covered with a special varnish. Then master has waited for some hours and device was ready to work.

Modern manual coffee grinders differ from those which have appeared in XV century only a little. Beans are filled through a funnel between two corrugated metal disks one of which is rigidly fixed, and another is rotated by the same handle which turns the screw at coffee filling. The most typical coffee grinders have the form of a box with small opened drawer in which ground coffee is poured. Manual coffee grinders have two ways of bean’s crunching: with the help of knifes or by millstone’s disks. Mill grinder makes a better grinding, than a coffee grinder with knifes. The most perfect and volume on the sizes models can be attached to a wall, they are more capacious and more convenient in use. Qualitative coffee grinders have the special screw regulating a grinding degree.

The biggest manual coffee grinder in the world is in England; its height is about five meters. If you will fill it with beans and crush them, you could give to drink with coffee all London and its vicinities.

The real coffee home is Ethiopia. The plant with red fruits of which you can make the bitter invigorating drink for the first time was discovered exactly in the Ethiopian province Kahve. In the course of time this drink has won subsequently the whole world.

Spreading

From Ethiopia coffee has extended to the neighboring Yemen and then got to other trading ways. Camel’s caravans delivered coffee together with spices from East Africa to the countries of Middle East and Europe.

Triumphal way

The first mentions about coffee can be found in annals of 575 year. In the east coffee has been elevated to a cult, the quantity of coffee houses increased as quickly, as quantity of people who knew how to prepare this drink. In 1511 in Mecca coffee was damned because the clergy has been disturbed about ceremony’s non-observance: during day and evening Mohammedan prayers many Moslems were sitting in coffee houses, ignoring the traditions which have been fixed for centuries.

The first coffee house has been opened in 1646 in Europe, in Venice. Triumphal procession of coffee has extended in France, Germany, Poland and Holland. In Russia coffee fashion was entered by Peter I, who have specified to submit it at meetings (in 1696).

Coffee began widely used after war of 1812 when heroes came back from subdued European countries. French officers have conceived a liking for coffee and have brought this habit to home. To drink coffee was a good form, as well as the French language learning.

In France coffee has got accustomed not at once. French people have started to drink it only in 1669, when Louis XIV who preferred cocoa to all drinks was ruled. Now France is one of the most coffee consuming countries in Europe! Annual coffee consumption per capita in France amount 5 kg! The first place for coffee consumption is occupied by the Scandinavian countries – Finland and Sweden. Obviously, it is connected with a frigid climate of these countries and a short light day. So, it is not necessary to dismiss historical spreading of coffee from Holland not only to Germany and France, but also to the Scandinavian countries.

Dirceu Veiga is an illustrator and designer who started his career in 1994. He illustrated books for children. He opened his own studio in 2001. Its name was Shoffar Studio and it was renamed later into Fast Icon Studio. This is his main work.
But he became famous when he started to paint with … coffee! He created his own website dedicated to these paintings and any person can order the painting drawn with coffee.
Being a coffee aficionado he decided to unite his two passions together and as a result if that the following works appeared:

Tanzanian Southern Peaberry

Coffee is on the first place in agricultural sphere of Tanzania. You can divide all coffee which is growing here into northern and southern sorts. The real “north” coffee which grows on Kilimanjaro Mountain, on border with Kenya, will amaze you with its flavoring qualities. It reminds Kenyan sorts, but has less acidity, and its basis is more gentle and light.

As to southern sorts which grow on mountains round Nyasa Lake on border with Malawi, they differ with the strongly pronounced taste, the lowered acidity and long aftertaste.

Coffee “Tanzanian Peaberry” is grown up in the Song city, Ruvuma area. It possesses strongly pronounced, but balanced flavoring qualities. It is a sated coffee, with difficult apricot, brandy and almond oil aroma. In process of cooling coffee develops a taste of sweet jasmine. But “Tanzanian Peaberry” coffee sort also has one problem which, probably, has nothing common with the country of growth or with original coffee taste.

The matter is that there are a lot of cases, when “Tanzanian Peaberry” coffee is prepared tasteless. It is result of its long travel in the container because of faults with transport in Tanzania. Therefore, even very qualitative coffee from Tanzania can get to your table already spoilt. The taste becomes too strong.

Sulawesi Toraja

“Sulawesi Toraja” coffee from Sulawesi Island differs with the lowered acidity, fine infusion and taste which will force you to forget about all affairs for a long time. Sometimes on native island this coffee is called Celebes – the old name of Sulawesi which was given to it by Dutchmen during colonial occupation. Under exactly such a name the most part of coffee made on island is exported now through Ujung Pandang port.

Earlier “Sulawesi Toraja” coffee sort was known under the name “Celebes Kalossi”. Kalossi is the name of Toraja area given by Dutchmen, area of dense woods where huge bats overhang from trees, and ancient patrimonial estates are similar to the ships more, then to houses.

The sated taste of Sulawesi Toraja coffee, which is processed in the dry way, differs with unusual smack of a maple syrup. It has a dense viscous consistence and deep earthen, mushroom and sweetish taste, a little lowered acidity and fruit shades.

The best Indonesian sorts have undergone to artificial ageing. You can meet them under names: “Old Brawn” and “Old Java”. Or there can be a special mark “Old Sorts” on the pack. Ageing process is carried out in a damp, warm climate and has nothing common with long beans laying in any other part of the world. As a result, coffee becomes sweeter. Its taste is more integral, and consistence – even more dense and viscous. The real coffee from Sulawesi Island is processed in the dry way. Local men simply spread crude coffee beans in the sun, dry them, take of a rind of coffee beans and sort manually.

Very often this coffee is over-roasted. The reason is that coffee beans from Sulawesi Island do not darken during frying time, like all others. Even if all of them are still green, frying process should be stopped after the second click of a coffee bean or even earlier.

Taken out a stylish box, reminding a sand-glass in form coffee grinder Delonghi KG 39 at once has made an impression. The black glossy qualitative plastic, rubberized for convenience of the device keeping sides and details of a coffee grinder, densely adjusted to each other, have advantageously differed Delonghi KG 39 from other representatives of its class. In respect of design Italians as always raised to the occasion.

Average sizes (13×13 × 21 cm) and weight (0,78 kg) coffee grinder is controlled with the help of the start-up button located in the top lateral part of the case. During coffee crunching it is necessary to hold the device in hands (one hand for pressing on the button, and another for holding the case) that isn’t very convenient. It is much more convenient, if the start-up button is situated on a cover above - then, switching a coffee grinder on, we can press the device to a table by one hand, providing the stability, so the second hand remains free.

Why the manufacturer has supplied Delonghi KG 39 with rubberized legs, remains for us as a riddle. During all the work there is no necessity to put the device on a table; it is more conveniently to hold a coffee grinder in hands. As this detail has proved to be enough useless, we can make a statement that it is a design element.

Now everything with a construction is clear, so we go directly on a grinding question. Pour some coffee at a rate of one tablespoon per one coffee cup as the manufacturer recommends. That’s not absolutely clearly, whence such recommendations came from, because your flavoring predilections can not be limited with a tablespoon of coffee per one cup…

But… Delonghi KG 39 secret consists exactly in this.

It is written in the operation manual that the coffee grinder is equipped with regulators of a grinding degree and regulators of cups quantity. Some people can be surprised of this statement because a coffee grinder is knife and there can’t be any metering device in it. The matter is that pouring some quantity of coffee spoons in a bowl, you should expose the same value on a regulator of cups quantity choice (from 4 to 12). For example if you have poured in a bowl 6 tablespoons of coffee you must press “6” on the regulator accordingly.

Then it is necessary only to press the start-up button and to keep it continuously until the first rough grinding indicator COARSE will light up (coffee of the such grinding is ideal for drop coffee makers). If you need to get more fine crushing, you must wait when the second indicator of an average grinding MEDIUM will light up (such grinding does for mocha coffee preparation), but don’t release the button in no circumstances or the differently value of your work will null, and you will never learn, what grinding level you has already gotten. For fine crushing reception (intended for espresso coffee makers) wait, when the third indicator FINE will light up. By the way, the indicator’s panel is located near to a twisting clockwise coffee grinder’s cover.

Thus, exposing the quantity of cups, you will set the certain time while the coffee grinder must process this coffee mass qualitatively. For example, coffee for 6 cups will ground faster than for 12, thus quality of ground coffee for different parties will be approximately identical.

It is necessary to notice, that an average-powered (150 Wt) Delonghi KG 39 copes with the basic function - coffee grinding – rather well, easily milling to 50 grams of coffee (for 12 cups) during 30 seconds. The grinding quality is excellent. You can feel the difference of a grinding degree pounding coffee between fingers.

Pluses: pleasant, remembered design, perfect quality of the device details assemblage and, that is the main thing, really high quality of a grinding.

Minuses: an inconvenient arrangement of the start button, some problems with riling a network cord off. The device price is a little overestimated.

In conclusion. Delonghi KG 39 coffee grinder is the mysterious device. It will take some hours to understand a principle of its work. But results of a grinding are perfectly well!

Qosmo is the portable coffee machine, created for Delta by Diverge Design, and using Delta Q capsules. The earliest Delta Q machine was made in Portugal. This project was initiated as a challenging one, to identify an entry level product, with an eye-catching design, a marketing period under 12 months, through local partners only. A portable coffee maker was created for different coffee drinkers in the urban conditions, people who do not stay at one place and are constantly moving. Besides, this became a perfect characteristic of deep-rooted tradition of coffee-drinking in this country. Portuguese people love coffee and can distinguish high quality coffee. So the task was not that easy. The manufacturer had to provide top notch equipment for people on the go. This is a reflection of life and culture as well who can’t be separated from the phenomenon of popularity of coffee beverage. Delta encapsulated coffee provides excellent quality at any time. The biggest part of the presented in the market machines differentiates themselves by aesthetics.

This portable coffee maker is rather compact as it weighs not more than 3.5 kg. Actually this is a reflection of modern trend of active lifestyle. All is superb about it: its simplicity and stylish design. The product was popular with consumers as mobility is valued highly nowadays. Besides, portability adds certain charm to it. When portable TV-set appeared it changed us as well and our lifestyle. Walkman and Discman let us take music everywhere. Mobile phones help us to stay connected and now we do not depend upon anybody as we always have our cup of delicious coffee with us!

You can use it at home as well and take it to the trip. It looks like a travelling luggage, with a handle and buttons.

No other espresso machine has ever been portable before.Qosmo has a transparent part and opaque one. It contains tank for 1.2 litre of water. Nice coffee fountain can be found in the front. You can just close Qosmo, its cable located below. The measurements of the machine are 27x31x17 cm. One can use Delta Q capsules and close the tray when the coffee machine is not used. Qosmo coffee machine comes in white, black and nacre. The price is 150 Euros.

Let’s begin our story with the small historical digression. Coffee has got to Kenya in the end of XIX century, from Ethiopia. Members of a religious brotherhood “Fathers of the Holy Spirit” have brought it to this country.

Kenya is the East-African coffee cradle. The best Kenyan coffee sorts are on sale not only under the badge “AA” or “AB”. They are sold exclusively at auctions and exclusively to a buyer who has offered the highest price. It is necessary to notice that the serious competition for coffee develops at these auctions, so the prices for it considerably grow. Coffee is growing up by strict rules, in the country it passes through constant researches and quality assurance. Even small farmers know the business excellently. An award to it consists in Kenyan coffee reputation as one of the best in the world.

Quality of coffee is under vigilant control of Kenya Coffee Department which is situated in Nairobi. It also inspects marks of each beans bag. Bags which have a mark “АА” contain first-rate quality coffee. They are usually bought by the special dealers delivering the product to gourmets. If there is a mark “АВ” on a bag it is the well-known Kenyan pea-shaped coffee.

In general you can describe Kenyan coffee in such a way: distinct individuality of a flavoring bouquet, berry, lemon or orange taste shades and high acidity. Many people don’t like this coffee because of the raised acidity. But true judges can’t live without this slightly sour Kenyan coffee.

It is impossible to make an exact definition to Ruiruiru coffee sort. You can feel the new taste notes, new aromas with each new cup and even with each drink. This coffee has no that sharp citrus smack which other Kenyan sorts have. The tastiest coffee of a Ruiruiru sort turns out of beans which have been fried no more than 8-12 hours ago. After the lapse of 24 hours after frying coffee already smacks cherry and cocoa more strongly.

The distinctive feature of the coffee welded of a Ruiruiru sort consists in drink’s aroma that varies “on layers”. For example, you start to drink coffee – and it seems to you as sweet with caramel aftertaste. But the more close to a cup’s bottom – the more bitter it starts to taste. Juicy notes of spices (cinnamon, carnation and the Jamaican pepper) and fresh tobacco are shown in it.
